Cucumber and Lime Ice Lolly Recipe

Doesn’t this feel like the hottest heatwave to hit London in years? A few days ago I literally saw a man sitting in a chair sunning himself at a roundabout, I’m not sure if he’d stopped mid-drive, or if he just liked the noise. Whatever his reasons, he too is clearly melting in this heat.

So we’re really wondering why more people aren’t making this glorious personal air-conditioner of an iced snack.

Maybe, you just didn’t get the recipe. Maybe you’re now feeling cranky as this unprecedented heat wreaks havoc on your nerves, and the air con in the office just isn’t working. Maybe you just want us to share the recipe with you now.

You will need:

1 large English cucumber, rinsed 250ml water 85ml freshly squeezed lime juice (from about 2–3 limes) 100g granulated sugar


Leave the skin on the cucumber. Cut off the ends and slice the cucumber thickly.
Put the cucumber and water in a food processor and blend to a fine purée.
Strain the purée through a fine sieve and add the lime juice and sugar.
Stir until the sugar has dissolved.
Pour the mixture into the ice-lolly moulds, leaving 5mm at the top to allow the mixture to expand when it freezes.
Insert a lolly stick and freeze.
